As I understand it, brewing coffee causes microscopic amounts of the bean to detach and become diluted in the very water that cooks and does the mechanical action. I was told that french press coffee is even better because it reduces interaction with paper filter, thereby eliminating both paper reside and allowing certain oils in the bean to incorporate in to the mixture unaltered.

So my question is, with a 4000 year old foodstuff, consumed by billions of people every day, why hasn't modern science perfected instant coffee? What is the fundamental deficiency in this area of science?

This could be the answer, it is that our taste buds are deficient. Not instant coffee itself. On the other hand, I have been told that a large component of sensory reaction in food is olfactory (smell) The brewing process disperses a scent that augments the taste. The question I have is the sequencing. Does the delay between the smells emitted by the cooking cooking process and consumption actually heighten the taste? And what would be the specifics of the phenomenon?

i dunno. lol.. i just like it better..
which is a good thing really because its cheaper..
also i dont drink more than 2 in the morning so it
would be kind of a waste to make a whole pot..
now i agree that some instant coffees suck bad.. but
i know which ones those are so i dont get them lol

Thanks for your perspective. It added something I had not thought about. when I make instant coffee, like you, I rarely drink more than 2 cups. When I brew coffee, if I try to make just 2 cups, I usually end up making more.

Also, it sounds like there are good instant coffees already out there, so this is probably not a business I could start and be competitive at.

Thanks for your perspective. It added something I had not thought about. when I make instant coffee, like you, I rarely drink more than 2 cups. When I brew coffee, if I try to make just 2 cups, I usually end up making more.

Also, it sounds like there are good instant coffees already out there, so this is probably not a business I could start and be competitive at.

also i know alot of ppl just HAVE to go to coffeeshops every day..
here of course it is Tim Horton's.. ppl are right addicted to that stuff.
its crazy.
while its pretty good, i will admit, i cant believe it is so necessary for ppl.
at work there is always someone going out for a coffee run.. everyone seems to want one.
i dunno. im glad i didnt get into it.. they are actually spending alot every week on it..
hell i can buy a jar of coffee for 7 bucks or something..
whats that like 2 cups at the coffeeshop or something..?

they have to prove they can afford $10-$12 every morning for coffee, and then another $6 in the afternoon for the cold coffee drink thingy with the whippy-cream on top
